On most weeknights, I’m not that interested in spending more than 30 minutes in my kitchen. That’s when I look to ALDI. The supermarket chain has a huge following thanks to its ultra-low prices, fresh produce, high-quality organic products, and clever shortcuts, like frozen items and jarred sauces. ALDI has everything you need to get a well-rounded dinner on the table with minimal effort. As an avid ALDI shopper, I’ve taste-tested tons of ALDI products over the years, and many of them have become the foundation for recipes I make on repeat. Here are five easy dinners that require just five ingredients each, all of which you can order on DoorDash for delivery from ALDI.
Note: Olive oil, salt, and pepper aren’t included in the ingredient count. Each recipe makes four servings and can easily be halved or duplicated if needed.
Chicken Sausage and Pasta Skillet
Ingredients
8 oz Priano Bronze Cut Penne
1 (12-oz) package Simply Nature Organic Sweet Italian Chicken Sausage
2 Tbsp extra-virgin olive oil
1 (24-oz) jar Priano Italian Sausage and Peppers Pasta Sauce
1 (5-oz) package Simply Nature Organic Baby Spinach
1 1/2 cups Simply Nature Organic Shredded Mozzarella
Salt and pepper
Instructions
In a large pot, bring 2 quarts of salted water to a boil. Add pasta and cook for 13 to 15 minutes. Drain pasta and set aside.
Slice sausage into 1-inch rounds. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add sausage and cook for 2-3 minutes per side.
Add pasta sauce and heat for 30 seconds. Add spinach and fold into the sauce until wilted, about 1 minute.
Add pasta to the skillet and stir until combined. Top with mozzarella cheese and stir until melted.
Remove from heat, season with salt and pepper to taste, and serve hot.
Teriyaki Veggie Stir Fry with Tofu and Coconut Rice
Ingredients
1 cup Specially Selected Jasmine Rice
3/4 cup coconut milk
2 Tbsp extra-virgin olive oil
1 (8-oz) package Earth Grown Teriyaki Tofu Cubes
1 (32-oz) bag Fusia Asian Inspirations Asian Stir Fry Veggies
1 cup Burman’s Teriyaki Sauce
Instructions
Rinse and drain rice in cold water. Combine rice, 3/4 cups water, and coconut milk in a medium saucepan. Stir to combine.
Bring rice mixture to a boil. Cover, reduce heat to low, and simmer 15 minutes or until liquid is absorbed. Remove from heat, fluff rice with a fork, and set aside.
In a large pan, heat 2 tablespoons olive oil over medium heat. Add tofu cubes and cook 2-4 minutes per side, until lightly browned. Remove from pan.
In the same pan, add stir fry veggies. Cover and cook for 5 minutes, stirring occasionally, until veggies are heated through.
Add the tofu and teriyaki sauce and stir until combined. Remove from heat and serve warm over coconut rice.
Zucchini, Red Onion, and Goat Cheese Frittata
Ingredients
9 Simply Nature Organic Cage Free Brown Eggs
1/4 cup + 2 Tbsp Friendly Farms Sour Cream
2 small zucchini
1 small red onion
2 Tbsp extra-virgin olive oil
1 (4-oz) Emporium Selection Garlic and Herb Goat Cheese Log
Salt and pepper
Instructions
Preheat oven to 400°F. Cut the zucchini and red onion into thin slices. Set aside.
In a large bowl, whisk together eggs and sour cream. Season with salt and pepper and set aside.
In a 10- to 12-inch oven-proof or cast-iron skillet, heat 2 tablespoons olive oil over medium-high heat. Cook the zucchini and onions, stirring until browned and soft, 5-7 minutes.
Pour the egg mixture over the zucchini and onions. Crumble the goat cheese over the top of the eggs.
Place skillet in oven and bake for 10-15 minutes, until set and golden on top. Slice frittata into wedges and serve warm.
Chicken Tikka Masala with Cauliflower and Peas
Ingredients
1 cup Specially Selected White Basmati Rice
2 Tbsp extra-virgin olive oil
1 pound Simply Nature Organic Chicken Breasts, cut into bite-size pieces
1 head cauliflower, cut into small florets
1 cup Simply Nature Frozen Organic Peas
1 (15-oz) jar Burman’s Tikka Masala Sauce
Instructions
Rinse and drain rice in cold water. Combine 1 1/2 cups water and rice in a medium saucepan. Stir to combine.
Bring to a boil. Cover, reduce heat to low, and simmer 15 minutes or until liquid is absorbed. Remove from heat, fluff rice with a fork, and set aside.
In a large pan, heat 2 tablespoons olive oil over medium heat. Add chicken and cook 4-5 minutes, stirring occasionally. Add cauliflower and cook 4-5 more minutes. Add peas and cook 2 more minutes.
Reduce to low heat, add tikka masala sauce, and let simmer 10 minutes.
Remove from heat and serve hot over rice.
Lemon Garlic Salmon Foil Packets with Broccoli and Potatoes
Ingredients
4 tsp extra-virgin olive oil
1 pound yellow potatoes, cut into 1/4-inch slices
4-5 garlic cloves, minced (about 2 Tbsp)
1 pound Fresh Atlantic Salmon Side, cut into 4 portions
1 lemon, sliced
1 head broccoli, cut into large florets
Salt and pepper
Instructions
Preheat oven to 400°F.
Prepare four 12-inch x 14-inch sheets of heavy-duty foil and drizzle each with 1 teaspoon olive oil.
Divide potato slices among the four sheets of foil. Season with salt and pepper and top each with 1/2 tablespoon minced garlic. Top potatoes with 1 salmon filet and season with salt and pepper. Arrange 2-3 slices of lemon on top of each piece of salmon.
Divide broccoli among the four sheets to surround the salmon, then seal each packet and place onto a rimmed baking pan.
Bake for 20 minutes or until salmon reaches 145°F.
