Whipped feta is a classy party trick — it’s easy to make but feels fancy. Especially when there’s shallot jam on top, another easy-to-cook recipe that punches above its weight class. Check out the recipe for whipped feta dip from TikTokker Harry Wallace

Ingredients

Whipped Feta Dip

  • 6 oz feta cheese

  • 1 cup full fat Greek yogurt

  • Zest of 1 lemon

  • Juice of 1 lemon

  • 2 cloves garlic

  • 1 tsp za’atar

  • 1 Tbsp olive oil, plus more to serve

  • Salt and pepper to taste

  • 1 Tbsp chopped chives

  • Carrot sticks, cucumbers, or pita chips for serving

Shallot Jam

  • 2 Tbsp unsalted butter

  • 3 large shallots, sliced thin

  •  Salt and pepper to taste

  • ½ cup water to deglaze as needed

  • 1 tsp red wine vinegar

  • 1 Tbsp brown sugar

Combine the feta, Greek yogurt, lemon zest, lemon juice, garlic, za’atar, olive oil, salt and pepper in a blender and blend until very smooth. Pour into a container and allow the dip to chill for at least 1 hour before serving.

Meanwhile, in a skillet over very low heat, melt the butter, then add the shallots and season with salt and pepper. Cover, and stir gently every so often until very well browned and caramelized, about 20-25 minutes. If the bottom of the pan looks dry, add a splash of water to deglaze. When the shallots are dark, jammy and soft, deglaze with the vinegar, add the brown sugar and stir again, letting them sauté for another 2-3 minutes. Turn the heat off, place the shallot jam in a bowl and allow to cool slightly before using.

Place the chilled dip in a serving bowl and top with the shallot jam, an extra drizzle of olive oil, and the chopped chives. Serve with carrot sticks, cucumbers, or pita chips.
