Kimberly Nichols, perhaps better known as Kimmy’s Kreations on Instagram and TikTok, started on social media because she wanted to teach her family and friends how to make the dishes they love from afar. And she especially loves cooking pasta. “I can sneak the veggies in there!” she says. Which is why this mom of four boys is all about her chicken broccoli alfredo recipe. “I love how everything comes together so perfectly! Seasoned chicken, soft pasta, but still with a bite of broccoli and the creamy cheesy sauce!”
Here’s how to make Kimberly’s creamy, cheesy chicken alfredo broccoli pasta:
Serves 4
Ingredients
6 ounces angel hair pasta
2 cups broccoli florets
2 chicken breasts, cut in pieces
3 tablespoons olive oil
¼ cup butter
1½ cups heavy cream
¼ teaspoon garlic powder
1¼ cup grated parmesan cheese, divided
Salt and pepper (to taste)
⅓ cup milk (optional)
Preparation
Cook angel hair pasta in salted water until al dente. Drain well.
Cook broccoli florets in boiling water for 3 minutes and drain.
In a large saucepan, sauté chicken pieces at medium heat in olive oil until done. Remove and set aside.
In same pan, melt butter and add cream, garlic powder, salt and pepper. Heat for 2 minutes at medium low heat without boiling. Add 1 cup parmesan cheese and stir to melt. Add chicken pieces, cooked pasta, and broccoli florets, lightly tossing to coat. If you want more sauce, add milk at the end.
Sprinkle ¼ cup parmesan cheese to garnish.
