Superstar singer Maria Becerra loves traditional Argentine food. Even when she’s far from home, food keeps her connected to her culture and family. And guiso, a lentil stew, holds a special place in her heart. Becerra is vegan; while guiso is usually made with meat, she likes to prepare a vegetarian version of her favorite lentil stew.

  • 1 onion

  • 1 scallion

  • 1 leek

  • 1/2 red bell pepper

  • 1 pound pre-cooked lentils

  • 1 can of whole peeled tomatoes

  • 1½ tsp. smoked paprika

  • 1 bay leaf

  • 3 cups vegetable broth or water

  • 2 potatoes

  • 2 carrots

  • 3 slices of squash

  • Salt to taste, pepper to taste, olive oil to taste

  • 3 Tbsp. chopped parsley
